Sharing far and wide. What an entertaining read! While we have no access to your recommended Spanish and southern Italian winter tomatoes here in the US, I’m loving the idea of using orange in a winter panzanella, at least until proper local tomatoes come online sometime in late July.

Thank you for this fine review of Tuscan bread.

I moved to Le Marche 3 years ago. From Tuscany head east.

We have the same problem here. The worst bread I have routinely been served. My husband is so happy that I finally found a properly made bread. It is a natural sourdough made with salt. It is made in Roma and shipped to our smallish (50k population) town daily(except Sunday) along with several other varieties including an 8 grain, a traditional integrale and believe it or not a white variety with no salt. The people who prefer tasteless bread can get bread, better than the worst bread, which has a great crust, a lovely texture but still carries the ancient tradition of bread with no flavor whatsoever.
