Thanks melody. I’ve eaten and loved Chinese and Japanese cuisine all my life, but only recently have begun to try and learn more about the cooking from a technical and historical perspective. As you know better than me, even in a whole lifetime I couldn’t learn everything about the cuisine of these 2 countries, but I’m enjoying scratching the surface at least! Very glad you’re enjoying these newsletters.
This is probably the only newsletter I don’t skim through. I always feel horrible just skipping to the recipe because people have invested their time into writing, so I try to read most of it. However, a curious cook, is truly enjoyable. I love the foundations, and I’ve actually reread them a couple of times now. I find them so interesting and it may sound weird, but also, so soothing. I look forward to continuing to read a curious cook and learning the background of these dishes and ingredients. It’s sparks my creativity in the kitchen. What a wonderful gift to give someone. I’m truly happy you’re connecting with so many readers. Congratulations! 🤍
